Quiche

What made me happy today? Quiche.
I made my first quiche a few days ago, and I absolutely love it! It's easy to make, very tasty, can be eaten both hot and cold, great for lunch or dinner, can easily be packed for a lunch at school or work and just all-round yummie!

The picture above is the first quiche I ever made. It was very tasty, so here's the recipe. Try it, you won't be disappointed!

Ingredients:

- 4 large eggs
- 120 ml of milk/replacement
- 250 gr of broccoli
- a couple handfuls of spinach
- 3 cloves garlic
- 1/2 red onion
- a few cherry tomatos
- about 120 gr of grated cheese (swiss/cheddar/gouda is a nice choice)
- olive oil
- sea salt + fresh pepper to taste
- a pinch of cayenne pepper
- unbaked pie pastry or puff pastry

Preparation:

- Sweat chopped garlic and red onion in a little olive oil. Meanwhile steam the broccoli and spinach for a couple minutes.
- Combine eggs and milk and add a bit of salt and pepper - include the cayenne
Fill pie crust with the onion + garlic mixture, broccoli, spinach and cheese (save a little for the top).
- Pour egg mixture over everything and top with the left over cheese and cherry tomatos
- Bake at 220°C for about 35 minutes, until egg mixture is solid.

Small warning: be carefull when you eat this, the cherry tomatoes are very hot on the inside and tend to splatter you with juice when being cut.
