These are the days

What made me happy today? Having a great day!
Wow, I had an amazing day. Slept well, got to work early as there was almost no traffic. Then, around ten, an email came. It announced that one of my colleagues was celebrating her birthday and had brought strawberry mousses for everyone! Super tasty :-)
In the afternoon, pie was announced through email. Another colleague was working her last day and had brought pie! I had a piece of apple pie, really tasty :-)
My day was super productive, so my boss let me go home an hour early. I had already worked a lot this week, so she felt like I earned it. And when I came home, I found a note in my mailbox, saying that a package had arrived for me. So I headed to the post office to pick it up. When I opened it, I found a note inside, thanking me for my order :-D
Now, I gotten more notes in packages, so it's not the first time that that happened. But this one is special, because it's hand-written. Awesome! Thanks Luci Daum design :-)
Now I'm going to unwind by doing a Star Trek Voyager marathon. If you don't hear from me again, I'm lost in the Delta quadrant ;-)

Summer snacks

What made me happy today? Summer snacks.
I had a day off today (Bank holiday), so I took some time to do some shopping. It was a lot less busy in the supermarket than in the weekend :-)
It also gave me the time to pick out some of my favorite summer snacks. I posted one of them a while ago. The other ones are fruit! Nice and healthy :-)
Summer is a great time for fruits like peaches, nectarines and cherries. I don't buy cherries at the supermarket, I have a tree from which I get more than enough. But I managed to score some very delicious yellow nectarines and peaches. And a melon.
I sure love these healthy summer snacks! What's your favorite?

Stir it up

What made me happy today? Stir fry!
I eat a lot of vegetables. One of my favorite ways to prepare veggies is a stir fry. Now when I was at the supermarket last Sunday I got a free bundle of scallions with my purchase (no idea why). I looked at a bunch of recipes to try and find a nice way to prepare them but in the end I decided to wing it.
This was the result:

It's very tasty, kind of healthy and easy to make.

What you need:
- 100 gr mushrooms, sliced
- 100 gr broccoli, in florets
- a bundle of scallions, sliced
- 100 gr of seitan or beef or poultry, in strips
- two soup-spoons of soy sauce
- a teaspoon of palm sugar

How to make it:
- put some oil in a wok, heat it
- toss everything in the wok except the scallions
- stir fry for a few minutes, until everything is nice and warm
- add the soy sauce, the sugar and the scallions and stir fry for about two more minutes
- serve with rice and enjoy!

Creamy goodness

What made me happy today? The creamy goodness of avocados.
Yup, I'm a huge fan of avocados. They're tasty, healthy and just all-round awesome.
And I've thought up another super fast, easy and tasty recipe for them!

What you need:

- pack of tortillas
- some grated cheese of your choice (I like a combination of mozzarella and cheddar)
- salsa
- one avocado
- onions if you like

How to make it:

- put one tortilla on a plate. Spread some grated cheese and onion on the tortilla. Microwave for about a minute, until the cheese is molten.
- slice the avocado in two. Add some avocado on the tortilla. Add some salsa.
- fold the tortilla and enjoy!

At first I thought that this recipe needed some sour cream, but the avocado is more than creamy enough. But you can add it if you like.
This recipe is so fast and easy to make and yet it's super tasty! Yum :-)

Tasty, healthy food

What made me happy today? Healthy food that is tasty as well!
I love avocado. It's super yummy, tasty and healthy! So yesterday I made a simple avocado - seafood salad. I loved it so much I made it again today.
Here's what you need:
- 2 ripe avocados
- half a lemon
- seafood of your choice, I used crab strips
- one small red onion
And this is how you make it:
- slice the avocados in two, twist, remove the seed amd scoop it out into a bowl.
- finely chop the onion, add to the avocados.
- add the seafood, mix together.
- drizzle with some lemon juice, mix again.
Enjoy on bread, toast or as dip!

Happy kitchen accident

What made me happy today? Having one of my happy kitchen accidents.
I was making stuffing for gorditas today. Just pretty basic stuff: mushrooms, bell peppers, onion, kidney beans, vegetarian alternative to ground beef, fajita sauce, corn. And I added a can of white beans in tomato sauce by mistake. I thought it was a can of corn... But turns out it was a great idea to toss in those beans, because this stuff is darn tasty!

Want to make this yourself? It's super easy: just get the ingredients mentioned ab ove, cook them, add the sauce and viola! Serve in gorditas, with some sour cream, grated cheese and other things you like.

Pancakes

What made me happy today? Pancakes!
I'm having pancakes today, so I decided to share my pancake recipe with you :-)

Ingredients:

- 400 gr self-raising flour
- 3 eggs
- pinch of salt
- 1 soup spoon of sugar
- 2 soup spoon of bread-crumbs
- 500 ml semi-skimmed milk
- 150 ml sparkling water

Preparation:

- Put the flour in a bowl. Break the eggs and add them. Add the bread-crumbs, salt and sugar. Add the milk. Mix with a mixer.
- Add the sparkling water. Mix again until you have a liquid dough (but not watery). If necessary, add some more sparkling water.
- Put some butter in a pan, let the pan get hot and pour a laddle of dough in it. Bake on both sides, until nice and golden brown.
- Serve with sugar, jam, syrup or topping of your choice.
- Enjoy!

Quiche

What made me happy today? Quiche.
I made my first quiche a few days ago, and I absolutely love it! It's easy to make, very tasty, can be eaten both hot and cold, great for lunch or dinner, can easily be packed for a lunch at school or work and just all-round yummie!

The picture above is the first quiche I ever made. It was very tasty, so here's the recipe. Try it, you won't be disappointed!

Ingredients:

- 4 large eggs
- 120 ml of milk/replacement
- 250 gr of broccoli
- a couple handfuls of spinach
- 3 cloves garlic
- 1/2 red onion
- a few cherry tomatos
- about 120 gr of grated cheese (swiss/cheddar/gouda is a nice choice)
- olive oil
- sea salt + fresh pepper to taste
- a pinch of cayenne pepper
- unbaked pie pastry or puff pastry

Preparation:

- Sweat chopped garlic and red onion in a little olive oil. Meanwhile steam the broccoli and spinach for a couple minutes.
- Combine eggs and milk and add a bit of salt and pepper - include the cayenne
Fill pie crust with the onion + garlic mixture, broccoli, spinach and cheese (save a little for the top).
- Pour egg mixture over everything and top with the left over cheese and cherry tomatos
- Bake at 220°C for about 35 minutes, until egg mixture is solid.

Small warning: be carefull when you eat this, the cherry tomatoes are very hot on the inside and tend to splatter you with juice when being cut.
