Soup
What made me happy today? Soup!
I love soup :-) It's easy to make, healthy, delicious and you can make a lot of it in one go! Which is really great, because if you have a freezer, you can freeze separate portions. That way, you can pop a portion in the microwave oven and have something warm to eat in minutes! Great if you're pressed for time.
Fall is finally here, and along with winter, these are the ideal seasons for soup. Of course, I can eat soup any time :-)
So here's the recipe for one of my favorite soups: mushroom soup, Hungarian style.
Ingredients:
-4 tablespoons unsalted butter
-2 cups onions (chopped)
-1 lb fresh mushrooms (sliced)
-2 teaspoons dill weed (dried)
-1 tbsp paprika
-1 tbsp soy sauce
-2 cups vegetable broth
-1 cup milk
-3 tablespoons all-purpose flour
-1 tsp salt
-black pepper (ground, taste)
-2 teaspoons lemon juice
-1/4 cup fresh parsley (chopped)
-1/2 cup sour cream
Directions:
- Melt the butter in a large pot over medium heat. Saute the onions in the butter for 5 minutes. Add the mushrooms and saute for 5 more minutes. Stir in the dill, paprika, soy sauce and broth. Reduce heat to low, cover, and simmer for 15 minutes.
- In a separate small bowl, whisk the milk and flour together. Pour this into the soup and stir well to blend. Cover and simmer for 15 more minutes, stirring occasionally.
- Finally, stir in the salt, ground black pepper, lemon juice, parsley and sour cream. Mix together and allow to heat through over low heat, about 3 to 5 minutes. Do not boil, boiling will cause the soup to curdle. Serve immediately and enjoy!

Grilled cheese!
What made ma happy today? Grilled cheese sandwiches!
I had some left-over cheese and bread lying around, so I decided to make one of my all-time favorite foods: grilled cheese sandwiches. Delicious, and ridiculously easy to make.
How do you make them? Of course, everyone has their favorite recipe. This one is mine. All you need is some of your favorite cheese and bread. Put the cheese between two slices of bread and stick that in the oven at 150°C for 10-15 minutes. Done :-)
Of course, you can make them in a pan as well, with either olive oil or butter. That's up to you. Enjoy!

Stir it up
What made me happy today? Stir fry!
I eat a lot of vegetables. One of my favorite ways to prepare veggies is a stir fry. Now when I was at the supermarket last Sunday I got a free bundle of scallions with my purchase (no idea why). I looked at a bunch of recipes to try and find a nice way to prepare them but in the end I decided to wing it.
This was the result:

It's very tasty, kind of healthy and easy to make.
What you need:
- 100 gr mushrooms, sliced
- 100 gr broccoli, in florets
- a bundle of scallions, sliced
- 100 gr of seitan or beef or poultry, in strips
- two soup-spoons of soy sauce
- a teaspoon of palm sugar
How to make it:
- put some oil in a wok, heat it
- toss everything in the wok except the scallions
- stir fry for a few minutes, until everything is nice and warm
- add the soy sauce, the sugar and the scallions and stir fry for about two more minutes
- serve with rice and enjoy!

Creamy goodness
What made me happy today? The creamy goodness of avocados.
Yup, I'm a huge fan of avocados. They're tasty, healthy and just all-round awesome.
And I've thought up another super fast, easy and tasty recipe for them!
What you need:
- pack of tortillas
- some grated cheese of your choice (I like a combination of mozzarella and cheddar)
- salsa
- one avocado
- onions if you like
How to make it:
- put one tortilla on a plate. Spread some grated cheese and onion on the tortilla. Microwave for about a minute, until the cheese is molten.
- slice the avocado in two. Add some avocado on the tortilla. Add some salsa.
- fold the tortilla and enjoy!
At first I thought that this recipe needed some sour cream, but the avocado is more than creamy enough. But you can add it if you like.
This recipe is so fast and easy to make and yet it's super tasty! Yum :-)

Dessert with beer
What made me happy today? Making a tasty dessert with beer, and getting to eat it as breakfast.
Ok, I know, not very healthy, but it was a timing issue. Last night, the BF and I made dinner together. As it was the weekend and we had plenty of time, we also decided on making some dessert. Our eye fell on a tasty recipe for a tiramisu with cherries and cherry beer.
Only thing is, we forgot the part where the tiramisu actually has to sit in the fridge for 4 - 6 hrs. So by the time it was done, it was way to late to eat it. But it made the perfect decadent Sunday morning breakfast :-)
Here's the recipe (serves 8):
Ingredients:
-24 lady fingers
-300 g mascarpone
-3 eggs
-570 gr destoned sour (tart) cherries (in a jar)
-100 gr dark chocolate
-3 soupspoons of white suger
-2 soupspoons of honey
-2 dl cherry beer (Kriek, of the type you like best)
Preparation:
- Drain the cherries but preserve the juice.
- Mix 1 dl of the beer with 1 dl of the preserved juice.
- Split the eggs, put the yolks in one bowl and the whites in another.
- Shave curls of the dark chocolate and put in the fridge.
Actual making of the tiramisu (+/- 30 min, refridgerate for 4 - 6 hrs):
1) Put the rest of the beer, the cherries and the honey in a pot. Bring to a boil until all moisture has evaporated. Allow to cool.
2) Whisk the yolks, along with the sugar into a smooth, foaming mass. Stir in the mascarpone.
3) Whisk the eggwhites until stiff, gently mix in the mascarpone. Gradually add the cherries.
4) Put one layer of ladyfingers into a large dish. Add the beer-cherry juice to flavour. Spread half of the mascarpone-mixture over it.
5) Cover with a second layer of ladyfingers, spread the rest of the mascarpone-mixture over it.
6) Refridgerate for 4 - 6 hrs.
7) Add the chocolate curls right before serving.
Enjoy!

Happy kitchen accident
What made me happy today? Having one of my happy kitchen accidents.
I was making stuffing for gorditas today. Just pretty basic stuff: mushrooms, bell peppers, onion, kidney beans, vegetarian alternative to ground beef, fajita sauce, corn. And I added a can of white beans in tomato sauce by mistake. I thought it was a can of corn... But turns out it was a great idea to toss in those beans, because this stuff is darn tasty!

Want to make this yourself? It's super easy: just get the ingredients mentioned ab ove, cook them, add the sauce and viola! Serve in gorditas, with some sour cream, grated cheese and other things you like.

Unexpected noms!
What made me happy today? Re-discovering a forgotten recipe!
I've had one very busy week this week. Today was the only day where there was nothing in my agenda besides chores around the house. It's a very grey day and we're expecting snow again. This seemed like the ideal time to go browsing through my cookbooks again. By doing so I stumbled across 'Texas cowboy cooking' by Tom Perini.
And that's when I re-discovered one of my favorite recipes for carrots. It's simple yet very tasty, but it's not suitable for children as it contains alcohol.
Carrots with bourbon sauce, for 6 - 8 servings. Although this may be less, as it's so damn delicious :-)
Ingredients:
- about 900 gr carrots, peeled and sliced into 2.5 cm pieces
- 60 gr of brown sugar
- 60 gr melted butter
- 2-4 tablespoons boubon
Preparation:
- Steam the carrots to your liking, depending on your preference for crunchy or soft. (I like them best when they're still a bit crunchy)
- In a medium saucepan, combine the sugar, butter and bourbon, and simmer over low heat until thick. Stir well.
- Pour the souce over the carrots and serve while hot.
- Enjoy!

Vegetable pie
What made me happy today? I made a delicious vegetable pie!
It's tasty, filled with veggie goodness and really easy to make. It's not really a pie as I didn't put on a second layer of dough, but you can add that if you like.

- Two large onions
- +/- 350 gr sweet potatoes
- +/- 350 gr carrots
- 4 eggs

- salt, pepper and garlic to taste
Preparation:
- Pre-heat the oven on 200°C.
- Clean the vegetables. Slice them in bite-sized chunks.
- Break the 4 eggs into a bowl. Add the milk and whisk thorougly. Add salt, pepper and garlic to taste.
- Put the puff pastry dough in a pie pan. Add the vegetables. Pour the egg mixture over it. Top off with the cheese.

Quiche
What made me happy today? Quiche.
I made my first quiche a few days ago, and I absolutely love it! It's easy to make, very tasty, can be eaten both hot and cold, great for lunch or dinner, can easily be packed for a lunch at school or work and just all-round yummie!
The picture above is the first quiche I ever made. It was very tasty, so here's the recipe. Try it, you won't be disappointed!
Ingredients:
- 4 large eggs
- 120 ml of milk/replacement
- 250 gr of broccoli
- a couple handfuls of spinach
- 3 cloves garlic
- 1/2 red onion
- a few cherry tomatos
- about 120 gr of grated cheese (swiss/cheddar/gouda is a nice choice)
- olive oil
- sea salt + fresh pepper to taste
- a pinch of cayenne pepper
- unbaked pie pastry or puff pastry
Preparation:
- Sweat chopped garlic and red onion in a little olive oil. Meanwhile steam the broccoli and spinach for a couple minutes.
- Combine eggs and milk and add a bit of salt and pepper - include the cayenne
Fill pie crust with the onion + garlic mixture, broccoli, spinach and cheese (save a little for the top).
- Pour egg mixture over everything and top with the left over cheese and cherry tomatos
- Bake at 220°C for about 35 minutes, until egg mixture is solid.
Small warning: be carefull when you eat this, the cherry tomatoes are very hot on the inside and tend to splatter you with juice when being cut.
Enjoy!

Cooking
What made me happy today? Cooking!
I love food and I love cooking. New recipes are always so much fun to try out, toy with and just give my own little personal twist!
Over the years I have added a lot of recipes to my repertoire. When I came to Leuven to study, I knew the basics. Being on my own and not wanting to eat the same things gave me the opportunity to start experimenting with recipes. I started with simple things, like a new type of pasta sauce. In the meantime I've added a lot to my cooking repertoire, much to the joy of some of my friends.
There's just something soothing about being in the kitchen, making food (or baking cakes / cookies) for the ones you love.
In the future I might upload some pictures of things I cooked / baked here, and some of my favorite recipes, but as I'm having a guest for dinner I'm off to my kitchen!
Enjoy your dinner, I know I will enjoy making mine :-)
